So what does a chap do, as a been-there, done-it, French-trained chef/restaurateur of over 20 years’ experience, all the culinary Munroes ticked off?

Well, first he hangs up his tall hat, and enjoys a well-earned sabbatical. He might take on a University post for a year, lecturing on catering, hospitality and hotel management. He then looks for an idyllic country property on Royal Deeside to retire to. He finds a gem of a rambling cottage, refurbishes it completely, and landscapes the garden. He takes his time choosing a wonderfully personnel, eclectic mix of rugs, pictures and furniture. Delightful antiques cosy-in with modern classics: arty, quirky, interesting. This is a country house in a miniature; roaring fires in the winter, drinks on the terrace in summer, a conservatory to enjoy all year round.

Then he finds he really has to share all this, not just with friends, but with people who will appreciate an ambience so harmonious and comfortable, it will restore a little perspective to a busy life. Oh, yes, he’s also missed the creative process of inventing new dishes, and recreating those that have beguiled so many taste-buds in the past. He needs the buzz of seeking out the freshest vegetables, the most superb meat and fish – produce that will be everything it should be, produce that will ring bells in the memory, reawakening and celebrating the sense of taste, so often dulled and disappointed in today’s fast world.

So he opens the….. WHITE COTTAGE
